Oats for lunch and maybe dinner.

I woke up thinking oh my god! Wow, do we have to eat breakfast only in the morning, only for breakfast, aren’t eggs, waffles and jams good for lunch too?

Breakfast in the mornings who made that rule. What, if I woke up late from a crazy hangover or I just stayed up late, watching my kids and woke up a little later then morning time. I’m talking, waking up around 12p.m. or 2 in the later morning is what I like to call it when that happens to me. Whether you wake up when it’s even later sometimes, you really would enjoy eating breakfast late —wouldn’t you.

Lately I’ve been waking up late because of my newborn, as if this pandemic wasn’t enough. It’s late nights like these at my house every night and trust me there’s no alcohol involved but we go ham! So we tend to wake up a little later and work “from home” don’t take it personal darling.

Oatmeal can be eaten for lunch, —but I don’t know about dinner. The fact is I made oatmeal for lunch, everything in the kitchen was either going to take forever and it was more of a quick healthy pick, it‘s easy edible for on the go or just when your craving breakfast and you’re stuck at home for lunch. ( quarantine for most now a days ) Oatmeal is healthy, it literally is better than not eating any breakfast at all.


But if you want real facts, it’s a composition of well- balanced breakfast ( meal since we can eat it whenever quiet honestly. ) It contains proteins, fats and grains of most. They are loaded with important vitamins and minerals and antioxidants, magnesium, iron the list goes on, you can read more on the nutrients on healthline.com for more nutritious simple eating facts.

Everyone is welcomed to added extra fruits or just granola flavors because that’s that trouble-free. 1 or 1/2 cup of oats depending how many people you are serving in your household, members/family/friends etc.



Boil two cups of water for a few minutes, adding a bit of coconut water endures the milky way oats tend to look, chop up all the fruit and granolas, almonds, into small diced cubes, cubes are cute. Add the oats once it’s boiling followed by rest of the ingredients stir it, scramble everything around. Pour it in a bowl or mason cup and enjoy a quick healthy meal for lunch and maybe dinner if you had a longer night.
